MARINATING TURNIPS IN ANOTHER TIME ZONE

A recipe that tastes of the Orient, and which will allow you to give your dishes an intriguing fusion touch.


These marinated turnips are recommended as an accompaniment to rather fatty recipes, because with their crispness, freshness and a hint of acidity they help cleanse the palate between bites. Try them together with a creamed cod or pork belly!


 


Ingredients:
- 1 celeriac (or a red or white turnip)
- 100 ml lightly salted soya
- 100 ml lime juice
- a piece of ginger
- 3-4 sprigs of fresh coriander


 


Preparation:


Start by peeling the turnips, then slice them thinly with a slicer or mandoline.


Prepare the marinade by adding the soy, lime juice, grated ginger and the leaves of 3-4 fresh coriander sprigs to a bowl.


Mix the liquids by whisking with a fork as if making a citronette. Season with salt and pepper - be careful, as soya is already quite savoury.


Pour the resulting citronette into the Lock-eat food jar and add the turnip slices one at a time. Leave to marinate for a day.
